Ive never heard of having to repack your bearings after deep water driving... Its a sealed bearing, same with the CVs (besides, its something like $100 to repack them)... Only needs service at a specified interval because of wear and tear, usually when changing your brake pads. However, you definitely need to get the driveshaft joints lubed up after everytime, they are exposed to water.

The brakes only need to be applied a couple of times after water driving to be dried. If your driving through thick mud, then I would throw some clean water on them to get the thick pebbles off the rotor.
