Andy,
Since you live in Flagstaff, I'd recommend either
Dunlop Radial Rover RV or
BFG AT TA KO. They are $113 and $115 accordingly (size: 31x10.50R15) from your local discount tire, which is located right off of Milton...near Safeway.
(I'm too lazy to search and find out what wheel size 2000 XE has, but made the assumption that it's 15"....is it 16"?

I know they have even less expensive choices, but assuming your off-roading around Flagstaff would involve mud more than rock crawling (unless you often go down to Sedona or even South...). I would not go for MT tires; AT tires would do better in snow condition and more comfortable.
So, if you can afford as a college student, Dunlop or BFG would be a good choice (as my opinion, of course).
