I do expose right, i use both my camera meter and my Sekonic, but its better to underexposed a little so you'll have room to play around in either PS or lightroom. An over exposed photo tend to record less data or detail.
Also for this type of job were bracketing wasn't an option you want to take the photo a under exposed, its better and easier to adjust an under exposed shot in photoediting software.

You get more data being a little under exposed photo than an over exposed shot.
