Okay, so every single person and their mom said 32x11.5 will fit on an '03 stock height X. But when I get mine on the front trimming is fine, but the tire actually hit the body behind the tire. Has anybody ever ran into this issue and if so how did you fix it?

Being an '03, has the suspension sagged any? You might consider cranking your t-bars a bit to see if that helps.

My BL will be here today, so that should help. But I was talking to some other people and realized my offset for my rim is 3.75" they said anything more than 4.75" would create bigger rubbing issues. Would love to keep these rims, just have to figure out a way to stop them from rubbing the body.

BTW the stock backspacing is 5.5" you should run between that and 4.75"... 3.75" back spacing is way to little back spacing.

That was my thought too after he mentioned the backspacing. By having too little backspacing, the wheels turn to steer in a different arc than they should. and that could be causing the rub.

A BL may help, but it will depend on if it will be enough to get it to keep it from rubbing.

even with with a 2" BL you'll probably still be into the metal trimming area with 3.75" BS

Yeah, I'm weighing my options. Might try to exchange them for rims with more BS or sell them to cut my losses.
