Some history for the word:
The original praline recipe, developed for Cesar, Duke of Choseul, Count of Plessis-Praslin in 1636 by his head chef, Clement Jaluzot. (For history fans, this was during the reign of Louis XIII, who was a big fan of the Duke's candied nuts.) The Mazet praslines are wonderful nuggets of caramelized sugar and roasted almonds.
