Hawkeye, White Rim is a long trail that can be done in a day but only if you race through. It isn't hard but is incredibly beautiful and should have a few days dedicated to it just so you can enjoy the scenery.

And if you can, go into Arches Natl' Park and hike out to Delicate Arch first thing.
Comming around the bend and seeing the arch is like walking up to the feet of god as he's creating the universe, your jaw will drop to to the ground.
