A 275/70/15 is smaller than a 275/70/16.
Just keep your rims, and get 31x10.5/15's.
That will be close enough, within a fraction of an inch of the height of the 275/70/16's, with maybe an inch less tread width....but, its an LT size instead of P-metric.
The 15's are typically cheaper than the 16's for most tires.
In short...you want to keep your rims, and get 31x10.5/15's BFG AT ko's, not 275/70/16's....unless cost is no object.
Then, you could get a set of OEM rims with 5.5" BS in 16", and get those 275/70/16's afterall.
Enjoy!
PS - the BL issue is on compression...which assumes you off road....
If you are willing to cut off the plastic in the front wells, you can run 32's.
That would be 32x11.5/15's.
If you do a PML with the pastic-ectomy, that size works pretty well for a lot of people too.
PPS - I suppose this would be a good time to go outside and look at what you have now, so you know if your size is 15" or not.
