Blocks are bad...and should be avoided.

Yes - you'd need a new alignment...as the front end goes up and down, the camber and toe for example go through a range of motion...so for a given ride height, there would be a specific alignment needed to give good tire wear, handling, etc.

Or just leave the suspension alone, and aim the headlights down a bit with the headlight adjustment screws built into the headlight assembly.
